{six week} MUFFINS

I’ve talked about these muffins before because i LOVE them!  I know it sounds weird that the batter can keep in your refrigerator for six weeks but it can (and they are yummy) so check them out. They are so tasty that ours usually only last a few weeks. Great for last-minute visitors or to have a nice afternoon treat with hot chocolate for the kids.  With this batter in the fridge you’re always ready to make muffins in about 15 – 20 minutes!  I even make a pumpkin flavored batch from time to time (see below)!

From The Lazy Gourmet-BEST OF THE BEST CALIFORNIA COOKBOOK
Ingredients:
1 (15 ounce) box Raisin Bran Cereal
3 cups sugar
5 cups flour
5 tsp baking soda
2 tsp salt
4 eggs, beaten
1 cup oil
1 quart buttermilk (4 cups)
In a very large bowl, mix Raisin Bran, sugar, flour, baking soda, and salt.
Add eggs, oil, and buttermilk.
This batter will keep up to six weeks in the refrigerator.
As you are ready to us it, fill muffin tins 2/3 full and bake at
400 for 15-20 minutes depending on tin size.
Yields 4-5 dozen
Mix the dry ingredients in one bowl & then the wet ingredients in another bowl!
Now don’t be afraid to get in there…I take off my rings and just mix the whole thing with my hands…but you can do it with a spoon…just be sure to mix the batter well!

Now if you want some pumpkin flavored…take about half of your muffin batter and add a small can of pumpkin (15 oz), a teaspoon of vanilla and some pumpkin pie spice!
Add to large muffin tins or small…bake and enjoy!

baking with KIDS

Laura’s rules for baking with kids:

  • Give myself extra time and an extra prayer for patience!
  • Give our goodies away…it’s only fair to share and then I don’t gobble them up myself! What neighbor doesn’t like homemade goodies?
  • Get Paige involved as much as possible.  It may get messy but she LOVES it. She even cracks eggs (I let her crack one at a time in a small bowl so that I can deal with eggshells each time and not mess up the whole batch).
  • Make an extra batch of goodies with out the kids so they are “germ free” (we try so hard to keep Paige from licking her fingers and then sticking them back in the bowl but she just cannot help herself!) This is important if you are planning on giving them away as gifts!
  • Make baking a project for Daddy!  Since I do not enjoy baking very often, she usually does this with Daddy! It’s a win/win because they bake, they bond and there are goodies to show for it in the end!

spaghetti, preschool, birthdays & parenthood

Here are some highlights of Paige’s birthday festivities.  She did not want to smile for a pic with Grammy but loved her little party at preschool and of course going to The Old Spaghetti Factory on her actual birthday was perfect. She loves her spaghetti and meatballs these days! I’ll post pictures from her party someday!

I’m so happy that the show Parenthood is back because in my opinion it is one of the best shows on TV! Love it!

Silly, sassy & sweet…

It’s hard to believe that our beautiful “Paigey” is three today! The best three words that I can use describe her from the moment she was born until now are silly, sassy & sweet! These are some of my favorite pictures from the last three years and I think they describe her well (especially the silly ones)! Happy birthday our precious girl! We love you more than you will ever know!

sharpen those pencils

 
 It is hard to believe our beautiful little Paigey started preschool last week,
our “handsome Grantsome” started walking a few weeks ago at Hume Lake
and our very busy summer is drawing to a close!
